Fermentation Chemistry and Health-Promoting Compounds in Florida Grapes and Their Wines

This work investigates the chemical changes occurring during fermentation of Florida-grown grapes, and examines how these processes influence wine composition and quality. The research also focuses on identifying and characterizing health-promoting bioactive compounds associated with potential chronic disease management
